Healthy & Hydrated | A Life Update

So, for those of you who don’t know, I struggle with chronic Lyme Disease and POTS syndrome. To help with these symptoms, we are:

#1  Trying Ultima–a natural electrolyte chocked full of vitamins.

#3 Transitioning into a Paleo diet

Thankfully, there is a very wide variety of yummy recipes to choose from. I’ve made a coconut cookie recipe. It was so easy! Only these ingredients…

Danielle Walker has a delicious recipe for Mexican Burgers in her book Meals Made Simple

You serve them on romaine lettuce, topping them with salsa, fresh diced tomatoes, & homemade guacamole. We’ve had them twice–definitely a satisfying meal!

Salads filled with fresh apples, pecans, deli meat, diced avocado, fresh strawberries (and if you’re not a staunch paleo follower, dairy products of cheese & Ranch can be used.)

Using fresh herbs like cilantro or rosemary in cooking is always a plus! Love the flavor.

That’s a little sneak peak into my life; a new adventure just beginning. I’ve enjoyed how much better my body feels being on the Trim Healthy Mama diet for several months in the past, so welcome paleo!
